This wine is the top of our production, made exclusively from selected grapes from our 8 clones of Sangiovese Toscana, vinified with extreme care. Fermentation takes place at a controlled temperature (21-23°) for about 18/20 days. At the end, only the flower must is decanted, in steel tanks, two or three times for two years. At the end of this refinement, the wine begins its maturation in 225-litre French and American oak barrels for 24 months before bottling. After a period of 8 months in the bottle, Cardisco is ready for our customers.
