Sangiovese

Produced exclusively from small berry Sangiovese grapes, typical of the Selvatici clone from ‘Vigna di Giustino’, where we directly sort the ripest bunches, taking care of the integrity of the berries. After destemming, the product starts its fermentation at a controlled temperature (28/30 degrees C°). Once all fermentation is complete, the wine is left to rest in stainless steel tanks for about 12 months, so that it can be stripped of all fermentation impurities and begin the delicate ageing process (minimum of four racking). After this phase, it is rested in small-volume French oak barrels (225 litres) where it will remain until it reaches its organoleptic balance. After bottling, it will remain in the cellar for at least a year before being tasted by the technical staff, who will decide whether it can be distributed.
